Goldsmith, C.F. III, Hamrick, S.E.G., Hamrick, H.J. Jr. The Best Hikes of Pisgah National Forest. John F. Blair, 2000. A straight-forward guide to all the sections of Pisgah National Forest. It's outdated but has no competition.

Molloy, Johnny. Long Trails of the Southeast. Menasha Press, 2005. Bartram Trail, Florida Trail, Benton MacKaye Trail... There are plenty of long distance trails in the Southeast, other than the A.T.
Stewart, Kevin G and Mary-Russell Roberson. Exploring the Geology of the Carolinas. UNC Press. 2007. A primer on geology followed by trips to many spots in North and South Carolina.
